Cooking session making chicken pie

Chicken Pie

The latest cooking session was hosted by HIVE HOSPITALITY by one of the Directors Adam Russell. We made chicken pie which the group loved.  Adam Russell spent his time talking the group through what he was doing and how they could amend the ingredients at home for a different taste or style of pie. INGREDIENTS

  • 500g of Boned & skinless chicken thighs
  • 100g Button mushrooms
  • 1 large white onion
  • 1 leek
  • 1 clove of garlic
  • 2x chicken stock cube
  • 3 springs of thyme
  • small bunch of parsley
  • white pepper and table salt
  • puff pastry block
  • 2 eggs
  • splash of milk

 

EQUIPMENT WISE

  • 1 large saucepan
  • 1 deep dish to cook pie in
  • 1 rolling pin
  • 1 chopping board
  • 1 pastry brush

Method

Dice onion an leek an put in sauce pan to soften
Add mushrooms and garlic
Mix both stock cubes with kettle water to cover ingredients
then add chicken thighs and allow to simmer for 25/30mins
chicken should then crumble apart
add mixer to pie dish apply pastry over the top of dish an brush with a mixed egg and pop in the oven for around 20 mins at gas mark 5 until golden.
